Hiratake Oyster Mushrooms are renowned for their mild umami flavor, subtle sweetness, and delicate, slightly earthy taste. They have a tender chewy texture and are well known for their ability to absorb flavors and aromas of the ingredients they are cooked with. They are often used as a meat substitute.

A fabulous addition to pasta sauces and curries. Simply crunch and drop into the cooking sauce and simmer for ~15 minutes. Alternatively, rehydrate with boiling water and add to add to rissoto, stir fry or quiche.

35g of crispy dry grey/blue hiratake mushrooms is equivalent to approximately 500g of fresh musrooms, so a little goes a long way in cooking!

They also contain compounds like beta-glucans and ergothioneine, which have been studied for their potential roles in immune function and antioxidant activity.
